Sweet

Granola with coconut yogurt and fresh berries

The natural goodness of grains and coconut yogurt are brought to life with the burst of flavor from fresh berries. Try strawberries, raspberries, blueberries or all three! Warning: this one is for the sweet-tooth!

You will need:

½ cup granola

3 tablespoons coconut (dairy-free) yogurt

A few fresh berries of your choosing

How to make:

Layer granola and then the coconut yogurt in a bowl. Top with your favorite fresh berries.

 

Banana bread

This one is delicious for an indulgent vegetarian breakfast or even an afternoon tea pick-me-up. Perfect for a cool morning, serve with a hot cup of joe!

You will need:

3 over-ripe bananas

2 cups white whole wheat flour

1 teaspoon baking soda

1 teaspoon vanilla essence

115g butter

80g brown sugar

2 beaten eggs

Pinch of salt

Pinch of cinnamon

Loaf tin

Butter or honey to serve

How to make:

Preheat oven to 180 degrees C. Grease tin.

Sift flour, baking soda and salt together in large bowl.

Mash bananas.

Cream butter, sugar, vanilla essence together in another bowl. Add mashed banana and beaten eggs, stir well.

Add banana mixture to flour mixture and combine.

Then add entire mixture to tin. Bake for approximately 60 minutes or until cooked through.

Slice and serve with butter or honey.

 

Savory

Breakfast Bruschetta

This is a fantastic go-to breakfast or lunch which requires little effort and always tastes fresh. The classic combination of tomato, onion, and balsamic vinegar can only be improved with the addition of avocado!

2 slices sourdough bread

Avocado

4-5 cherry tomatoes

Red onion

Teaspoon of balsamic vinegar

How to make:

Lightly toast sourdough

Dice tomatoes and a couple of slices of red onion. Place in small bowl and add balsamic vinegar. Mix gently.

Smash avocado onto sourdough.

Add tomato and onion mixture.

Season to taste.

 

Wholemeal English muffins with wilted spinach and mushrooms

Spinach is a great source of protein. It’s important not to forget about protein when you eat vegetarian, and once you try this recipe, we promise you’ll never forget about spinach again!

You will need:

1 wholemeal English muffin

2 handfuls of spinach leaves

4 small button mushrooms

How to make:

Olive oil

Halve muffin and toast

Halve button mushrooms and sauté in pan with olive oil

Toss spinach leaves into p1an, just enough to wilt

Top muffins with mushroom and spinach

Season to taste

 

Veggie big breakfast

This is the vegetarian answer to the classic bacon and eggs big breakfast, featuring baked beans, scrambled eggs, beetroot rosti, grilled tomato, mushrooms, and toast. You might even make your meat-loving friends jealous when they spy your vibrant beetroot rosti and fried tomato!

You will need:

Small tin of baked beans

Large tomato

2 large mushrooms

1 egg

1 tablespoon milk

Pinch of chives

2 slices whole grain bread

1 small beetroot

Olive oil

Preheat oven to 180C.

Peel beetroot. Spiralize (or grate) the beetroot. Combine in a bowl with seasoning and 2 teaspoons olive oil. Press into a gentle handful (or two if you have enough). Place on baking tray and cook for approx. 15 minutes or until beetroot is cooked through.

Heat baked beans slowly on stove-top.

Slice tomato into slices 1-2cm thick. Grill or pan-fry tomato.

Slice mushrooms. Then move the mushrooms to a pan and saute in olive oil.

Whisk egg, milk, and chives in a bowl. Add to pan on medium heat and scramble while cooking.

Toast bread.

Compile all elements on your plate when cooked. Enjoy!

 

On-the-go

Muesli, fruit and yogurt cup

If you’re a person without a lot of time for breakfast in the morning, this is a healthy and practical option for you. Pre-slice fruit the night before, so in the morning you can simply layer in a container and go!

You will need:

½ cup muesli

½ cup natural yogurt

½ cup sliced fruit – try strawberries, kiwi fruit or even grated apple

Large glass or sealable container

How to make:

Layer half of the muesli, half of the yogurt and half of the fruit into the container.

Repeat with the remaining half portions.

Banana berry smoothie

If you’re not big on eating much in the morning, this smoothie is ideal to kick-start your day with some nutrients. Perfect to enjoy while walking to work, commuting, or dropping the kids at school.

You will need:

1 banana

1 cup of mixed berries

¼ cup natural yogurt

¼ cup tropical juice

A few ice cubes

How to make:

Place all ingredients in a blender and blend until smooth.
